Fruit Rice Pudding Serving Suggestion - Bake them in Cookies!
Another quick & easy serving suggestion when you have some extra fruit rice pudding in the fridge or freezer. Start by making your favorite batch of cookie dough. I made Raisin Oatmeal cookies this time but shortbread, sugar cookies or peanut butter cookies would all work equally as well, depending on your dietary restrictions. Add a big pop of color and flavor by topping them off with your favorite fruit rice pudding... Soo easy!
Just make up a batch of your favorite cookie dough.
Form the dough into individual 1 Tbsp sized balls, or drop spoonfuls onto a greased & floured baking sheet.
Push the centers down by using the back of a spoon, or wet your fingertips in water and press the centers down halfway to create a divot.
Top each cookie with a teaspoon of your favorite fruit rice pudding flavor and bake as usual, as per your recipe.
With the added toppings, they will take a few minutes longer than usual to cook so add on an extra 3 or 4 minutes to the baking time. Remove the cookie tray from the oven.
Allow the tray to cool 10 minutes on a wire rack and then loosen the cookies so that they don't stick to the pan. Place them in an airtight container and place them in the fridge for up to one week or place in a freezer grade container and freeze them to enjoy at a later date.... If there are any left lol. Mix and match cookie doughs and fruit rice pudding flavours. The variations are endless. Bon Apetite!
